Alvin Sun has operated his food truck in Atlanta for years with Atlanta’s Best Chicken Sandwich. This year Alvin opened his Taiwanese Walk Up Cafe at PREP’s Food Junction. Java Saga is a collective of 7 restaurants that have grown up and have a brick and mortar presence at our campus. PREP Food Junction is located ITP @ Spaghetti Junction. You can see us from I-85 and we are accessible from Chamblee Dunwoody Road to 3781 Presidential Parkway.
Java Saga is an Atlanta-based food truck serving up coffee and other mouthwatering treats. Alvin Sun, the truck’s founder, was working as a Wholesale Real Estate agent when he decided he wanted a change. After spending some time in Taiwan studying the art of coffee with the Specialty Coffee Association of Europe (SCAE), Alvin returned to the states and opened Java Saga.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
The first year was a rough start. First was finding the right crew to help me out. However, the biggest struggle would be finding enough events. While locating events should have been the top priority, I focused on the daily operations at our usual spot next to Grady Hospital. In addition, our generator couldn’t provide us the power required, where I had to, unfortunately, drop events because we couldn’t be supplied power. Going into our second year, we have a new generator and many events lined up. The newest struggle goes back to the first where I’m short staffed because members of my crew have conflicting schedules.
Alright – so let’s talk business. Tell us about Java Saga – what should we know?
Java Saga has expanded to our brick and mortar walk up window. We serve caffeinated drinks to those in need, in addition to teas and smoothies to those that don’t like coffee. We’re known for our coffee/espresso drinks. Our specialty is our Big Ole Chicken (giant fried chicken fillet) and our mango smoothie.
